The Mat-Su Valley's premier honey celebration gathers Southcentral Alaska's beekeepers as the fireweed bloom fades and harvest season peaks across the Matanuska-Susitna farmlands. Alaska honey is among the world's most distinctive: fireweed honey — the state's signature varietal — has a delicate pink color and lychee-rose fragrance from the vast fireweed meadows that carpet burned and cleared landscapes across the Boreal north. Beekeepers also produce sweet clover, borage, and mixed wildflower honeys during Alaska's intense 20-hour summer days, which accelerate nectar production. The showcase features raw-honey tasting flights, Alaskan mead sampling, queen-rearing demonstrations by veteran Mat-Su beekeepers, and educational sessions on overwintering colonies through Interior Alaska's −40°F winters.
