New Iberia's annual celebration expands in 2028 to honor both Louisiana's historic sugarcane heritage and its thriving tallow tree and tupelo honey industries. Local beekeepers from the Atchafalaya Basin and coastal marshes offer honey tastings, while Cajun chefs demonstrate honey-infused cooking in live demos. The Louisiana Beekeepers Association hosts an apiary tour at a working tallow tree honey operation nearby. Live zydeco music and traditional Cajun food complete the experience.
