Waimea — also called Kamuela — sits at 2,670 feet on the saddle between the Kohala Mountains and Mauna Kea on the Big Island of Hawaiʻi, a landscape of emerald pastures and cool mists carved by the Parker Ranch, one of the largest cattle ranches in the United States and the heart of Hawaiʻi's paniolo (Hawaiian cowboy) tradition. The surrounding highlands produce some of the most botanically complex honey in the world: beekeepers harvest from the native ʻōhiʻa lehua (Metrosideros polymorpha), whose distinctive crimson pom-pom flowers bloom year-round across the Kohala slopes and produce a delicately sweet honey that has become one of Hawaiʻi's most prized culinary exports. The macadamia orchards of the Hamakua Coast and North Kohala contribute a distinctively buttery, caramel-edged macadamia blossom honey during the spring flush. At the coast below Waimea, beekeepers in the South Kohala leeward zone work the white kiawe (mesquite, Prosopis pallida) forests near Kawaihae, where ultra-low-moisture kiawe honey — sometimes called 'white honey' — crystallizes to a smooth opaque white and fetches exceptional prices for its near-zero water content (often below 15%). The festival, held at the Parker Ranch Center, showcases all three of the Big Island's signature honey types alongside demonstrations of traditional Hawaiian beekeeping — Hawaiʻi's geographic isolation from Varroa destructor on certain islands makes it a global research site for mite-free beekeeping — paniolo heritage celebrations, and honey pairings with Waimea's celebrated local cuisine.
