Western Connecticut's honey character differs markedly from the coastal zone: the higher elevation, cooler temperatures, and greater forest cover of the Housatonic highlands create a later but more concentrated honey flow dominated by basswood and black locust in early summer, followed by a rich goldenrod and aster harvest in autumn, producing the thick, full-flavored honeys that have made the Litchfield Hills region a destination for artisan honey enthusiasts.
