Saratoga Springs — New York's celebrated spa and thoroughbred city at the Adirondack foothills gateway, where the mineral springs and the legendary racing tradition frame a honey landscape of singular richness: goldenrod honey from the open meadows and the Saratoga Battlefield fields, basswood honey from the mature linden-rich forests of Saratoga Spa State Park and the surrounding Adirondack transition zone, black locust honey from the ridge-top forests above Saratoga Lake, apple blossom honey from the Washington County orchard country to the east, wild blueberry honey from the Adirondack barrens north of the city, and buckwheat honey from the farms of the Battenkill River valley to the west — in a community renowned for its Victorian architecture, its thoroughbred racing tradition stretching back to 1863, its mineral spring bathhouses, its philanthropic arts culture anchored by SPAC, and its perfect August afternoons that have drawn New Yorkers from every direction for more than a century. This August festival at Congress Park celebrates Saratoga County's remarkable honey diversity through producers from the Adirondack foothills, the Mohawk Valley, and the Champlain Valley, offering competitive honey shows featuring Saratoga's signature goldenrod and basswood varietals, guided tastings exploring the transition from Adirondack boreal honey to Hudson Valley agricultural honey, and educational programs connecting honey production with the pollinator habitats of Saratoga Battlefield and Moreau Lake State Park.
