Apalachicola — the legendary oyster town and fishing village at the mouth of the Apalachicola River in Franklin County, northwestern Florida, where the swamp forests of the Apalachicola River floodplain produce the world's most famous monofloral honey: Tupelo honey, harvested from the white Ogeechee tupelo (Nyssa ogeche) trees that line the river's swamp forest corridors from the Florida Panhandle north into Georgia and Alabama. Tupelo honey is the rarest and most prized honey produced in the United States — it can only be harvested from a 2-3 week window each spring (typically late April through mid-May) when the Ogeechee tupelo trees bloom over the Apalachicola, Suwannee, and Chipola river swamps, and its unusually high fructose content (over 44%, vs. 38% for typical honey) means it resists crystallization indefinitely, maintaining its liquid state for years. The honey's flavor — ethereal, floral, with hints of cinnamon, vanilla, and a characteristic herbal-buttery finish — has made it the subject of films (Ulee's Gold), books, and culinary pilgrimages. The Apalachicola Bay is also one of the Southeast's premier oyster-producing estuaries, and the festival celebrates the remarkable culinary combination of world-famous Tupelo honey and Apalachicola Bay oysters alongside hive tours on the river swamps, live tupelo honey extraction demonstrations, and the full heritage of Franklin County's extraordinary swamp honey tradition.
