Fredericksburg — founded in 1846 by German immigrants in the heart of the Texas Hill Country, now famous for wineries, peach orchards, and one of Texas's most vibrant small-city cultures — anchors Gillespie County's extraordinary wildflower honey landscape on the Edwards Plateau. Gillespie County's honey traditions represent the finest expression of Texas Hill Country terroir: the Pedernales River watershed's limestone terrain, abundant spring-fed streams, and Mediterranean-like climate support an extraordinary succession of wildflowers from February through November. Bluebonnet (Lupinus texensis) — Texas's state flower — provides a brief but iconic spring flow in late March-April. Huajillo (Senegalia berlandieri) from the limestone brush country provides one of the Hill Country's most prized early-spring honeys: water-white, mild, and extremely fragrant. Catclaw acacia (Senegalia greggii) contributes an early summer flow. Spanish lavender (Lavandula stoechas) from Gillespie County's thriving lavender farms — the Hill Country has become Texas's Provence — provides a prized aromatic honey. Sunflowers from field edges and roadsides add a late-summer harvest. Fredericksburg is within 30 miles of Lyndon B. Johnson's childhood ranch.
