Fredericksburg — founded in 1846 by German immigrants in the heart of the Texas Hill Country, now famous for wineries, peach orchards, and one of Texas's most vibrant small-city cultures — anchors Gillespie County's extraordinary wildflower honey landscape on the Edwards Plateau. Gillespie County's honey traditions represent the finest expression of Texas Hill Country terroir: the Pedernales River watershed's limestone terrain, abundant spring-fed streams, and Mediterranean-like climate support an extraordinary succession of wildflowers from February through November. Bluebonnet (Lupinus texensis) — Texas's state flower — provides a brief but iconic spring flow in late March-April.
