Devils Lake — the largest natural body of water in North Dakota at 125,000 acres, surrounded by the remarkable Prairie Pothole Region — anchors Ramsey County's exceptional honey landscape at the heart of one of North America's most important waterfowl and pollinator habitats. The Prairie Pothole Region around Devils Lake contains tens of thousands of glacially formed wetland depressions supporting an extraordinary density of wetland wildflowers that make North Dakota one of America's top honey-producing states. Sweet clover (Melilotus alba and M. officinalis) is North Dakota's signature honey plant: the roadsides, wetland margins, and Conservation Reserve Program grasslands of the Devils Lake basin support massive sweet clover colonies producing the most prolific honey flows in the Great Plains. Alfalfa from the surrounding farmland contributes to the summer harvest. Native prairie wildflowers — prairie clover, goldenrod, aster, bergamot, blazing star — from the remaining native grassland remnants and restored CRP plots add complexity to the region's honey profile. Sunflowers from the northeastern North Dakota fields provide a distinctive late-summer honey. North Dakota consistently ranks in the top 3 states nationally for honey production, with Ramsey County beekeepers managing many of the state's most productive operations. The festival at Sully's Hill National Game Preserve visitor area celebrates the extraordinary natural heritage of the Prairie Pothole Region alongside Devils Lake's living honey traditions.
