Buffalo County's honey traditions reflect the extraordinary productivity of the Platte Valley's irrigated agriculture intersecting with the world-famous Central Flyway. Sweet clover (Melilotus alba) is Nebraska's dominant honey plant: the roadsides, field margins, and Conservation Reserve Program lands throughout Buffalo County support massive sweet clover colonies that provide one of America's most abundant and accessible honey flows in June-July, producing clear, mild, lightly floral honey with excellent body.
