Emporia — the 'Waltz Capital of the Nation' and Lyon County seat at the eastern edge of the Flint Hills, home of Emporia State University and one of Kansas's most vibrant small cities — sits at the gateway to the largest remaining tract of unplowed tallgrass prairie in North America, where the cherty limestone soils of the Flint Hills that made cultivation impossible also preserved a honey landscape of extraordinary ecological integrity: native tallgrass prairie wildflowers including prairie clover (Dalea purpurea and D. candida), goldenrod, ironweed, bergamot, and the spring honey flow from redbud and plum that make Flint Hills honey one of Kansas's most distinctive regional varietals. Peter Pan Park's scenic Emporia setting hosts this late-June festival celebrating the honey heritage of the Kansas Flint Hills — America's Serengeti — featuring beekeepers from Lyon, Chase, and Greenwood counties who maintain hives within and adjacent to the Tallgrass Prairie National Preserve and the sweeping Flint Hills landscape that extends from Nebraska to Oklahoma. Kansas's Flint Hills represent one of America's most important honey landscapes precisely because of what was never destroyed: the native prairie wildflower diversity that was eliminated across most of the Great Plains by the plow survives here on the cherty Flint Hills soils, creating a honey flow from genuinely wild prairie plants that carries flavors absent from the clover-dominated honey of adjacent cultivated regions.
