Raw basswood honey from The Appalachian Beekeeping Collective, a project of the non-profit Appalachian Headwaters that supports beekeepers in the mountains of Virginia and West Virginia. Basswood is the American linden tree. The collective describes the honey as mildly spicy with a woody, minty bite, and lighter and milder than its traditional Appalachian Honey. Partner beekeepers manage their hives to avoid diluting it with nectar from plants that bloom before and after the basswood. Sold in 12 oz and 16 oz jars. Serve it with cheese, as the collective suggests, or use it in tea and salad dressings.
