Jarrah honey from Royal Honey Australia, collected near Nannup in the south-west forests of Western Australia, about 280 km south of Perth. Jarrah (Eucalyptus marginata) grows only in this corner of the state and flowers irregularly, often every second year. The honey is dark amber, bold, nutty and malty, with a smooth caramel finish. It is naturally low in glucose, so it stays liquid far longer than most honeys. Use it in dark fruit cakes, drizzled over roast pumpkin, or with blue cheese.
