Mill Creek Apiary Raw Blueberry Honey

Raw blueberry honey from Mill Creek Apiary in Medford, New Jersey, made while the bees pollinate South Jersey blueberry fields in spring. It is medium amber with a full body: buttery and earthy, a little tangy, with a light blueberry note at the end. No flavoring is added; the fruit character comes from the blossom nectar. Blueberry honey carries more sucrose than many varietals, so expect it to crystallize sooner. Sold unfiltered in a 1 lb glass jar. Use it on pancakes, in muffin batter, or in a vinaigrette for a spinach and goat cheese salad.
