Winter-harvest avocado honey from beekeeper Chuy Gutierrez in Uruapan, Michoacan, the centre of Mexico's avocado belt, sold by the specialty honey house Mieles A de Abeja. Avocado honey is very dark, close to molasses in colour, and this lot is tasted as clove, cinnamon, star anise, cooked squash, stout beer and dried mushroom. It is savoury and long on the palate rather than sweet. Use it in teriyaki-style sauces, vinaigrettes, gravy, chocolate desserts, chai or cafe de olla. It comes in 175 g and 390 g jars and is sold as a named single-producer lot.
