The nectar comes from flowering red stringybark (Eucalyptus macrorhyncha) in the Strathbogie State Forest of north-eastern Victoria. The seller says it is totally raw and bottled cold, without any warming or heating. Stringybark honey is typically darker than most, with a rich, thick texture, and the seller calls the flavour bold, warm and toffee-like. It comes in a 500 g glass jar with a resealable metal lid. Spread it on crumpets, bake it into flapjacks, or glaze roast pumpkin with it.
