Raw white tupelo honey from Register Family Farm, a veteran-owned operation running about 1,500 colonies along the Apalachicola and Choctawhatchee rivers in Northwest Florida. Hives are moved onto the river swamps for the two-to-three-week tupelo bloom. The honey is light gold with a faint green tint, smooth and floral, with cotton-candy sweetness and a soft pear finish and no bitterness. Its high fructose content keeps it liquid in the jar.
