Honey from the jataí, a tiny stingless bee (Tetragonisca angustula) native to Brazil's Atlantic Forest, sold by Abelha Brasil, a stingless-bee honey business in Mandirituba, Paraná. A jataí colony yields only about 1.5 kg of honey a year, so it is bottled in small batches. The producer describes it as clear and translucent, thin and fluid, with a mild, slightly acidic taste and a delicate aroma. It is sold in a 100 ml bottle (about 140 g) and should be kept refrigerated after opening. Chefs quoted by the producer use it with salads, cheese, grilled fish and red-berry desserts.
