Thyme honey from Airborne Honey, a New Zealand honey company with more than 110 years of history and its own US store in Ventura, California. Thyme grows wild across the arid hills of Central Otago on the South Island, and Airborne says the honey has a burnt-grass colour. The producer calls it intensely aromatic, with lingering, herby and savory flavours. Airborne strains its honey through a coarse mesh, and each jar carries a batch code that links to an analysis of that batch online. Brush it over roast lamb, eat it with goat cheese, or whisk it into a lemon dressing.
