Beech forest honeydew honey from Airborne Honey, a New Zealand honey company sold in the US through its own store in Ventura, California. Bees make it from droplets produced by a small scale insect (Ultracoelostoma assimile) living in the bark of New Zealand beech trees, mostly black beech and to a lesser extent red beech. The trunks turn black from the sooty mould that grows on the surplus. Airborne describes a thick, red-amber honey with a full, heady, almost pungent and malty flavour, one of its strongest. The producer suggests it in marinades to add richness to barbecues and roasts.
