Viper's bugloss (Echium vulgare), also commonly called borage, covers the hills of the central South Island in brilliant blue each summer; the plant takes its name from a seed that resembles a viper's head. Airborne describes the honey as delicate in flavour with a chewy texture, and suggests keeping a jar in the refrigerator so it firms into a chewy treat.
