Apiario Florin Assa-Peixe Honey

Single-flower honey from assa-peixe (Vernonia polyanthes), a shrub that blooms in early winter across the Atlantic Forest. Apiario Florin keeps its hives in the mountains of Espirito Santo and sells direct in 300 g to 1 kg jars. The honey is almost water-clear and translucent, with a light, fresh taste that Brazilians compare to orange blossom honey but with less perfume. It crystallizes fine and white. Use it in tea, over fresh cheese such as minas frescal, or anywhere a very light honey will not mask other flavours. The producer carries Brazilian family-farm and organic seals.
