Raw black locust honey from The Appalachian Beekeeping Collective, which works with beekeepers in the mountains of Virginia and West Virginia. Black locust (Robinia pseudoacacia) is the same tree behind European acacia honey, and the collective says it is one of the first nectar sources for bees in these forests. Its beekeepers describe the honey as floral, fruity and delicate, very sweet with hints of vanilla and no aftertaste. It is very clear and light, from white to lemon yellow with a faint green cast. Sold in 12 oz and 16 oz jars. Pair it with cheese or stir it into tea.
