Raw sourwood honey from The Appalachian Beekeeping Collective, a project of the non-profit Appalachian Headwaters that works with more than 100 beekeepers in the forested mountains of West Virginia and southwestern Virginia. Sourwood trees bloom for a short season, and partner beekeepers manage their hives to keep nectar from earlier and later flowers out of the crop. The collective describes the flavor as delicate, with anise and spice, lighter than its bold Appalachian Honey. Sold in 12 oz and 16 oz jars.
