Raw gallberry honey from Bee Friends Farm, a Jacksonville, Florida beekeeping business started in 2013 by beekeeper Michael Leach. Gallberry is a native evergreen holly whose small white blossoms open from late April through early June; its small purple berries are not edible. The farm describes the honey as thick, aromatic, mild and buttery, and says it is slow to crystallize, so it stays pourable. Raw and unfiltered, in 12 oz and 24 oz jars. Try it in tea, drizzled over chicken and waffles, or as the base for a salad dressing.
