German Rapeseed Honey (Rapshonig)

Creamed rapeseed honey from Imkerei Tietjen, a beekeeping business in Klein Meckelsen, Lower Saxony, that trucks roughly 400 colonies to the oilseed rape fields of Schleswig-Holstein on the Baltic coast each spring. Rapeseed nectar is high in glucose, so the honey sets within days; Tietjen stirs it into a white, smooth, spreadable cream. The taste is medium-strength but plain and sweet, with little floral perfume and a faint cabbage-like note typical of brassica honey. It is the standard breakfast honey in northern Germany: spread it on rolls, melt it into porridge, or use it in baking where you want sweetness without a strong honey flavour.
