Goldenrod honey from Gil's Honey Bees, a third-generation beekeeping family in the Finger Lakes region of New York. Goldenrod (Solidago) blooms in late August and September, making this a true fall honey. It is gold-amber with a distinct, sharp flavour and crystallises quickly into a creamy set; the 2025 crop was lighter and turns almost white when fully crystallised. The honey is sold raw, unheated and unfiltered, in liquid or crystallised form. Use it in apple and pear desserts, with sharp cheeses, or in autumn baking.
