Raw ulmo honey from Isla Tranqui Honey Company, a family producer selling honey from the rainforest region of Chilean Patagonia. Ulmo (Eucryphia cordifolia) is a white-flowering tree that grows only in southern Chile and Argentina. The producer sends a sample of each harvest to an outside laboratory and rates it by its share of ulmo pollen; this lot tests at 62% ulmo, above the 45% level the producer uses for a monofloral ulmo honey. It describes ulmo as a silky honey. It is raw and unfiltered, in an 8 oz (227 g) jar. Try it on toast, with fresh cheese, or stirred into tea.
