London Honey Company British Borage Honey

Single-variety borage honey from The London Honey Company, produced by its hives in Essex. Borage, also called starflower, is grown as a field crop in eastern England for its seed oil, and bees working it in summer produce one of the palest British honeys. This one is unusually clear, light and delicate, with a clean floral taste and none of the heavy notes of heather or dark blends. It is raw, unpasteurised and only lightly filtered, with nothing blended in. It stays runny longer than rapeseed honey. Use it in herbal tea, on cheese boards, in salad dressings, or anywhere a strong honey would overpower the dish.
