Lüneburg Heath Heather Honey

Heather honey from Imkerei Schell, a family beekeeping business in northern Germany that moves hives onto the Lüneburg Heath and Sylt when the ling heather (Calluna vulgaris) blooms in late summer. The honey is reddish-amber and naturally sets to a thick, jelly-like body instead of running; Schell also sells it stirred to a creamy texture. The flavour is spicy and herbal with a slightly bitter, tangy finish. It is pressed rather than spun out of the comb, which is why it carries more pollen than most jarred honeys. Spread it thick on dark rye bread, stir it into plain yoghurt, or pair it with aged cheese.
