Monofloral dandelion honey from Mieli Thun, the Paternoster family honey house in Ton, Trentino, which moves its hives around Italy to follow single blooms. Dandelion flowers from March to May. The producer describes an intense yellow honey with a split personality: a pungent nose of wet hay, roots, vinegar and cheese rind, then medium sweetness on the palate with vanilla and a clear chamomile note. It tends to crystallize quickly. Sold by Food Shed Idaho in a 250 g (8.8 oz) jar. Mieli Thun pairs it with bitter greens such as endive and escarole, uses it to glaze pork, and works it into fresh egg pasta dough.
