Cammells Pohutukawa Honey

Pohutukawa honey from Cammells Honey, a New Zealand family packer. Pohutukawa (Metrosideros excelsa) is the coastal 'New Zealand Christmas tree' whose red flowers bloom along the shoreline for a few weeks in December and January, so the crop is small. The honey is very pale gold, finely textured and delicately sweet, with a faint salty finish that reflects its coastal source. It crystallises quickly into a smooth white set. Use it where you want sweetness without colour or strong flavour: in tea, over fresh fruit, or in light vinaigrettes.
