Tasmanian leatherwood honey from R. Stephens, a family apiary started by Robert Stephens in 1920 and still based at Mole Creek, Tasmania. Leatherwood is a tree that grows wild in the cool rainforests of western Tasmania, and the hives sit in remote, unfarmed forest. The seller describes the honey as bold and aromatic, floral and slightly spicy, with a lingering perfume. It is sold raw, untreated and unpasteurized in a 500 g reusable glass jar by Good Aussie Stuff, which ships from the USA. Try it with strong cheese, on sourdough toast, over oatmeal or stirred into black tea.
