Sleeping Bear Farms Star Thistle Honey

Raw star thistle honey from Sleeping Bear Farms in Beulah, Michigan, in Benzie County near Sleeping Bear Dunes. The farm has harvested it for more than 25 years from the abundant purple star thistle that blooms in Northern Michigan each summer; it is a different plant from California's yellow star thistle. The farm sells it as pure, unfiltered raw honey and describes a clean, mild sweetness with a light floral finish. Sold in 12 oz bears and 16 oz and 32 oz squeeze bottles. Use it in tea, on toast and biscuits, or whisked into a vinaigrette.
