Spanish Thyme Honey (Miel de Tomillo)

Thyme honey from Río de la Miel (Apicultura del Río), a Spanish beekeeping business with apiaries in Castilla y León and Aragón. The bees work wild thyme on the dry uplands of the central meseta during the spring and summer flow. The honey is light amber, with an intense floral aroma and fruity notes. It tastes very sweet but stays delicate rather than sharp, and it crystallises slowly into a creamy, even texture. The producer suggests it for infusions and tea, and in savoury cooking: brush it over roast lamb or pork, or whisk it into a vinaigrette for salads with goat cheese.
