Mountain fireweed honey from Sunny Honey Company, a Washington honey business founded by beekeeper Anne Smith, who keeps her bees in Whatcom County and runs a shop at 89 Pike Street in Seattle. Each summer the hives are moved high into the Cascade Mountains. The seller says the crop is mostly fireweed, with a little pearly everlasting and some goldenrod that darkens it slightly, and describes it as sweet, light, silky and very smooth. It is a limited crop sold in a 9 oz glass honey pot. Use it in tea, on warm scones, or over fresh berries and yogurt.
