Raw catclaw honey from True Love Honey in Arizona, made from catclaw acacia (Acacia greggii), a thorny shrub native to the southwestern United States and northern Mexico. The seller says the first draw of the season is always light in color, while later draws can darken as mesquite begins to yield nectar, and that the honey turns thick, white and creamy when it granulates. It is never warmed above hive temperature. Supply is short and irregular, according to the seller. Sold in an 8 oz jar, plain or creamed. Spread it on cornbread, stir it into hot tea, or serve it with sharp cheddar.
