Forest honey from Norwegian Beekeeper, whose apiaries sit in or at the edge of woodland about 50 km (31 miles) northeast of Oslo. The producer's laboratory analysis attributes 95% of the nectar to wild raspberry, wild blueberry and lingonberry, and the rest to rowan, thistle and goat willow. The honey is raw, unheated and unfiltered, then stirred gently over several weeks into a creamy, spreadable texture. The flavour is mellow and sweet with a soft, vanilla-like finish. Each jar holds 250 g and ships from Norway. Spread it on bread, serve it with sharp or salty cheese, or stir it into yogurt or tea.
