Yaylim Turkish White Honey (Beyaz Bal)

Turkish white honey, or beyaz bal, from Yaylim, sold in a 350 g glass jar. It is pale, near-white and naturally crystallized into a soft cream that holds its shape on a spoon. The flavour is mild, delicate and gently sweet, without the malt or bitterness of Turkish chestnut and pine honeys. The seller lists it as raw, unfiltered and free of added sugar; the pale colour comes from the flower source and crystallization, not from processing. Spread it on simit or toast, stir it into tea, or put it on a cheese board next to salty white cheese.
