What to Look For

- ✓Crystallization
Natural and expected. Means the honey hasn’t been ultra-processed.
- ✓Pollen Content
Visible particles or cloudiness indicate unfiltered, genuine honey.
- ✓Single Floral Source
Named variety (clover, wildflower, buckwheat) shows traceability.
- ✓Thick Consistency
Real honey drizzles slowly. Thin, runny honey may be diluted.
Red Flags to Avoid
- ✗Ultra-Clear or Transparent
Likely ultra-filtered to remove pollen. May hide origin or adulteration.
- ✗Very Cheap Price
Quality raw honey costs $8-15+/lb. Prices far below that suggest dilution with corn syrup.
- ✗"Honey Blend" Label
Often mixed with cheaper sweeteners. Real honey doesn’t need blending.
- ✗No Origin Listed
Reputable honey always states country of origin. "Blend of US and foreign" is a red flag.
- ✗"Pure" Without "Raw"
"Pure" has no legal standard. Look for "raw" and "unfiltered" specifically.
- ✗Added Ingredients
Real honey is 100% honey. Any additives (sugar, syrup, flavoring) mean it’s not pure.
Questions for Your Beekeeper
- ?How many hives do you manage?
Small-scale beekeepers (5-50 hives) often produce higher-quality, more attentive harvests.
- ?What flowers do your bees forage on?
Tells you the floral source and whether it’s monofloral or wildflower.
- ?When was this honey harvested?
Fresh harvest (within 6-12 months) ensures peak enzyme activity and flavor.
- ?Is this honey raw and unheated?
Confirms it hasn’t been pasteurized. Raw honey is never heated above 118°F.
- ?Do you treat your bees with antibiotics?
Treatment-free or organic beekeepers avoid chemical residues in honey.
- ?Can I visit your apiary?
Transparent beekeepers welcome visitors. It’s a sign of confidence in their practices.
Label Reading Tips
- ●True Source Certified
Third-party verification of origin. Prevents honey laundering from banned countries.
- ●USDA Organic
Bees forage in pesticide-free areas within a 2-mile radius. No antibiotics used.
- ●Country of Origin
Required by US law. "Product of [single country]" is better than multi-country blends.
- ●UMF / MGO Rating
For Manuka honey only. UMF 10+ or MGO 263+ indicates therapeutic grade.
