Honey Yogurt Pancakes

Greek yogurt makes this a thick, tangy pancake batter rather than the thinner milk-only base. Honey is mixed into the batter; an extra honey drizzle is a separate serving choice.

Divide the batter into 12 small pancakes and serve 3 per portion. Allow 10 minutes preparation, 5 minutes resting and about 20 minutes cooking in batches. Pan size and thickness change the time, so check the centers.

9Ingredients

Batch size

Yield: 4 servings

  • 187.5 g all-purpose flour
  • 225 g plain whole-milk Greek yogurt
  • 1/2 cup whole milk
  • 2 tablespoons clover honey
  • 1 large egg
  • 42.6 g unsalted butter, melted and divided
  • 4.6 g double-acting baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon table salt

Ingredient amounts scale; instructions show the original batch. Cooking times and pan sizes may need adjustment. Season to taste. Honey grams use US measures at 20°C and 17.5% moisture, a density estimate; weigh your honey for precision.

Instructions

  1. 1Mix the dry ingredientsWhisk the flour, baking powder, baking soda and salt in a bowl.
  2. 2Mix the wet ingredientsReserve 14.2 g of the measured melted butter for the pan. Whisk the remaining 28.4 g with yogurt, milk, honey and egg until combined.
  3. 3Fold and restFold the wet mixture into the dry ingredients just until no dry pockets remain. Rest for 5 minutes. The batter should be thick rather than runny.
  4. 4Cook in batchesWarm a nonstick or well-seasoned skillet over medium-low heat. Use the reserved butter in small amounts across the batches. Divide the batter into 12 roughly equal portions, spreading each gently into an 8–10 cm pancake.
  5. 5Turn when setCook about 2–3 minutes on the first side, until bubbles appear and the edges begin to set. Turn and cook another 1–2 minutes, lowering the heat if the surface darkens before the center cooks. Check that the center has no wet batter.
  6. 6ServeDivide into 4 servings of 3 pancakes. The estimate counts all measured butter, including the pan allocation, not an assumed absorption fraction. Extra honey, fruit or yogurt is outside the base.

Greek Yogurt and Batter Texture

Use plain whole-milk Greek yogurt for the measured base. Regular yogurt, sweetened yogurt and different fat levels change both batter consistency and composition.

Stop folding when the flour is moistened. A lumpy batter is fine; beating it smooth can make a tough pancake. The 5-minute rest gives the batter a chance to settle before cooking.

Honey in the Batter

Clover honey supplies a mild sweetness. Acacia honey is a lighter-tasting option. Compare honey for baking if you want a bolder floral variation.

A surface drizzle is optional and changes the estimate. The measured 2 tablespoons are already inside the batter.

Cooking and Serving

Cook the thick pancakes over moderate heat. A dark outside can hide a wet center; lower the heat and allow more time rather than rushing the next batch.

Fruit, a small butter pat or a spoon of yogurt can be added for serving, outside the plain-base estimate. The photos show the optional butter and yogurt. Refrigerate leftovers promptly and reheat until hot.

Nutrition Estimate

Nutrition is estimated from the listed ingredient weights divided into 4 servings. It includes all measured honey, milk and butter where listed; no cooking-loss or drained-liquid adjustment is assumed.

This is an ingredient-based estimate, not a laboratory analysis of the finished dish. Extra toppings and substitutions change the result.

Frequently Asked Questions

Why is the batter thick?

Greek yogurt contributes a thick texture. Spread each portion gently so the center can cook through.

Why are the pancakes brown outside but wet inside?

The pan may be too hot for the thick batter. Use lower heat and check the center before taking them out.
