About this recipe

These honey English muffins use a soft milk dough, a short preferment and gentle griddle cooking. Honey sweetens the dough while a small measured amount of cornmeal coats the outside.

Plan for the rests before heating the pan. The stated yield is eight rounds, cooked four at a time; a smaller skillet needs additional batches and a longer cooking allowance.

Honey English Muffins Recipe: Griddle-Cooked Rounds

Batch size

Yield: 8 servings

  • 310 g all-purpose flour
  • 152 g whole milk
  • 102 g water
  • 21 g clover honey
  • 18 g unsalted butter
  • 6 g salt
  • 3 g active dry yeast
  • 12 g yellow cornmeal

Ingredient amounts scale; instructions show the original batch. Cooking times and pan sizes may need adjustment. Season to taste. Honey grams use US measures at 20°C and 17.5% moisture, a density estimate; weigh your honey for precision.

Instructions

  1. 1Start the prefermentStir yeast into the 102 g water at about 100°F (38°C); leave 10 minutes. Add the milk at room temperature and 190 g of the flour. Stir smooth, cover and rest at room temperature for about 60 minutes, until small bubbles appear.
  2. 2Mix the remaining doughAdd the remaining 120 g flour, honey, salt and melted cooled butter. Mix into a soft, sticky dough. Use a damp hand or bowl scraper to fold the dough up and over itself 6–8 times, working around the bowl. Cover and rest 60 minutes.
  3. 3Fold againRepeat the folds, round the dough gently in its bowl, cover and rest another 60 minutes, until puffy. It should be soft enough to stretch; do not add unmeasured flour to make a stiff loaf dough.
  4. 4Shape eight muffinsDivide into 8 equal pieces with a lightly damp scraper. Gently round and flatten to about 1/2 inch thick. Divide the 12 g cornmeal over both faces of the rounds, pressing it lightly onto the surfaces. Cover on parchment and let rise about 30 minutes.
  5. 5Cook in two batchesPreheat a wide nonstick skillet or griddle to medium-low heat. Cook four muffins for 10–15 minutes per side, until both sides are browned and the sides look matte. Lower the heat if the surfaces brown too fast. Repeat with the second four; allow up to 60 minutes for the two batches, or longer if your rounds need it.
  6. 6Cool and fork-splitCool on a rack for at least 30 minutes. Fork-split around each muffin’s middle, then pull the halves apart. Toast if desired. Extra butter, jam, eggs or other fillings are additions beyond the base.

Soft dough makes the difference

A soft dough can hold irregular air pockets, while additional flour changes its texture. The folds give it structure without a long kneading session. Use a scraper and lightly damp hands to handle the dough.

This honey adaptation follows a preferment-and-fold method rather than a quick baking-powder muffin batter. Honey is in the dough, and the card counts its full 21 g.

Keep the griddle gentle

The outside can brown before the middle cooks. Medium-low heat gives the center time to set. If a split muffin still contains wet dough, return the halves to gentle heat and finish cooking before serving.

The cooking allowance uses two batches of four at the long end of the published 10–15 minutes per side. A small pan needs extra batches. Use the cooked appearance and center texture as well as the clock.

Make-ahead and serving

The schedule allows 35 minutes preparation, three 60-minute rests, a 30-minute shaped rise, 60 minutes cooking and 30 minutes cooling. Those parts add to 5 hours 35 minutes.

Store cooled muffins airtight for up to 2 days, or freeze split halves. Toasting changes texture, but any extra topping changes the food being served.

Choosing the honey

Clover honey makes a mild base. Wildflower is a fuller-flavored alternative; buckwheat is more assertive, especially on toasted bread. Keep the measured amount the same when changing variety.

The chart is an editorial flavor guide on a 1-to-5 scale, not a measurement or a record of kitchen testing.

Nutrition basis

The card divides the measured ingredient inputs into 8 portions. 8 English muffins; cook in two batches of four.

The calculation uses raw USDA ingredient inputs. Fermentation, baking loss and finished weight have not been measured. Toppings and substitutions change the estimate.

Method sources

The preferment, folds and low griddle method are adapted from King Arthur Baking’s English muffins. This version uses honey and makes eight portioned rounds without cutting away scraps.

Use the cited methods for context, and keep this page's ingredient weights and yield together.

Frequently Asked Questions

Are these baked in a muffin tin?

No. English muffins are flat yeast-bread rounds cooked on a griddle or skillet. The base is not an oven-baked quick muffin.

Why does the recipe take several hours?

The preferment and two dough rests build the dough before shaping. The total also includes the shaped rise, two griddle batches and cooling.

What if my skillet holds only two?

Use additional batches and add their cooking time. The printed schedule assumes four fit without touching.

Why fork-split instead of slicing?

A fork pulls the crumb apart irregularly. A knife makes a smoother cut; either way, cool the muffins before opening them.
